Tuscan Chicken,
Zucchini & White Bean Ragout
½ cup chopped onions
2 cloves garlic, sliced
2 cups chicken chunks (use rotisserie chicken)
2 cups zucchini chopped into 1 inch pieces
1 can whole white beans, drained
1-2 cups chicken broth (if you want it more like soup)
1 TBL heavy cream (optional)
½ tsp dried thyme or 1 TBL fresh
Salt and pepper to taste
½ cup pre-shredded Parmesan (optional)

I got this recipe from Laura Jackman. Thanks, Laura! We used the broth and cream and it was wonderful.
1. Cook onions and garlic in olive oil until soft, not brown.
2. Add zucchini, thyme and broth (if using) and continue cooking until zucchini is soft.
3. Add chicken, beans and cream (if using).
4. Salt and pepper to taste. Continue cooking until it is hot.
5. Serve in bowls with Parmesan on the top (if desired).
